One battered pan, a grandmother's recipe, and a stubborn belief that Lucknow deserved dosas as crisp as the ones on Ranganathan Street. This is how Bhukkad Dosa began.

Ammamma always said the secret to a good dosa isn't in the batter — it's in the wrist. The way you pour, the way you swirl, the exact second you know to lift.
We spent twenty summers watching her at her Chennai stove, and one winter in Lucknow realising nobody here made a dosa the way she did.
So we opened a small counter in Hazratganj with two tawas, a bag of urad dal, and her recipe. That was five years ago. Today we make 99 kinds of dosa, and we still use her wrist.
